The perfect luxurious roast dinner side dish, this indulgent cauliflower cheese is ideal for a cold January afternoon when only true comfort food will do. Rich, warming and deeply savoury, it transforms a humble vegetable into a standout centrepiece worthy of a premium cheese board or Sunday roast. Our Old Hag Ale & Mustard Cheddar brings exceptional depth of flavour, with the gentle bite of wholegrain mustard and the richness of real ale expertly blended into our mature cheddar for a truly elevated finish.
Preheat the oven to 200°C (180°C fan / Gas Mark 6). Wash and chop your cauliflower into bite-sized pieces. Lay them in a single layer on a lined baking tray and coat with a drizzle of olive oil, salt and pepper. Roast in the oven for around 20 minutes until tender and lightly golden.
Meanwhile, make your cheese sauce. Melt the butter in a pan, add the flour and seasoning, and stir into a smooth paste. Gradually add the milk, stirring constantly, until the sauce thickens and coats the back of a spoon. Melt in the Old Hag Ale & Mustard Cheddar, allowing the flavours to fully develop.
Once the cauliflower is roasted, fold it into the cheese sauce until evenly coated, then transfer to a roasting dish. Top generously with extra cheese and bake for 25 minutes, until bubbling and beautifully golden.
Serve as a luxurious side to a warming winter dish or classic roast dinner.
