Amaretto and Roasted Butternut Squash Winter Salad with Toasted Seeds

This delicious and luxurious salad is perfect for a cool day. Crumbling our special edition Amaretto Cheshire on top to add a sweet and warming bite to a humble salad. Warm and creamy roasted butternut squash, paired with our Amaretto, apricot and orange cheshire and some pomegranate seeds for a fresh and juicy bite.

This recipe is simple yet delicious with the addition of the toasted butternut squash seeds to add a toasty crunch that complements the warm, creamy flavours from our Amaretto Cheshire.

Ingredients

  • 1 butternut squash
  • 150g kale
  • 1 tbsp olive oil
  • Pinch of salt and pepper
  • 1 tsp smoked paprika
  • 100g Amaretto Cheshire
  • Salad dressing
  • Pomegranate seeds

Method

  1. Dice up the butternut squash into small cubes - save the seeds for roasting!
  2. Coat in olive oil and seasonings
  3. Roast in the oven for around 30 minutes until golden brown
  4. Meanwhile spread out the leftover seeds on a baking tray, top with a little oil, salt and pepper and roast for about 10 minutes until crisp
  5. Assemble the salad with a layer of kale, a layer of roasted butternut squash and a layer of crumbled Amaretto Cheshire cheese.
  6. Top with the toasted seeds, salad dressing and pomegranate seeds.
  7. Enjoy a warming creamy salad with a burst of freshness!
