Add our extra mature Black Bob cheddar to a classic to give it an even more delicious flavour, perfect for a chilly autumn day.
Fry off the onion and carrots for a few minutes with some olive oil
Add mince and fry off for a few more minutes until mince is browned, then add crushed garlic
Fry for another minute and then add chopped tomatoes and seasonings to taste
Leave to simmer while you make the cheese sauce
Melt butter in a separate pan, once melted add the flour and mix to a paste,
Add a third of the milk and mix over a low heat until sauce has thickened
Repeat with another third of the milk, and then the final third. The sauce should coat the back of the spoon.
Add 150g of your grated Black Bob extra mature and mix until thick and melted.
In a large oven-proof dish, layer Bolognese sauce, then lasagne sheet, then cheese sauce.
Sprinkle the rest of the Black Bob over the top and bake at 180 degrees for 35-40 minutes until the top has browned.
Take out of the oven, serve and enjoy!
