Carrot cake with Amaretto Cheshire Icing

Taking cheesecake to a whole new level! This moist and warming carrot cake takes a boozy twist with our Amaretto cheshire icing. With warming flavours of nutty Amaretto and sweet apricot and orange, the flavours of our Amaretto Cheshire perfectly pair with the warm spices and sweet nuttiness from carrot cake.

Ingredients

For the cake

  • 260g plain flour
  • 2 tsp baking powder
  • Pinch of salt
  • 1 ½ ground cinnamon
  • 295 ml vegetable oil
  • 200g granulated sugar
  • 190g packed light brown sugar
  • 1 tsp vanilla extract
  • 4 eggs
  • 300g grated carrots
  • 120g chopped pecans
  • 70g raisins

For the icing

Method

  1. Mix the dry ingredients in a bowl
  2. Mix the oil, sugar and vanilla extract in a separate bowl
  3. Add the eggs one by one and mix in
  4. Gradually add the dry mixture into the wet and combine
  5. Add in the grated carrots, pecans and raisins and mix in
  6. Divide into two tins and bake for 35 minutes at 180 °C
  7. While baking, mix the yoghurt, cheese and icing sugar together in a food processor
  8. Once the cake is cooled, sandwich together with icing in the middle and then top with more icing and apricots and enjoy!
