Cheshire Cheese Beetroot Salad

We love how versatile our Cheshire Cheese is. Crumbly and moist, it the perfect addition to any seasonal salad.

Ingredients

  • 100g pickled beetroot, cubed
  • 200g Cheshire Cheese Company Cheshire cheese, crumbled
  • 100g spinach leaves
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Juice of 1 lemon
  • 2 tablespoons white wine vinegar
  • Salt and pepper to taste
  • Crushed pistachios for garnish

Method

In a small bowl, whisk together olive oil, honey, lemon juice, white wine vinegar, salt, and pepper until well combined. Set aside.

In a large salad bowl, combine the spinach leaves, sliced pickled beetroot, and crumbled Cheshire cheese.

Pour the prepared dressing over the salad mixture. Toss gently until the ingredients are evenly coated with the dressing.

Transfer the salad to serving plates or bowls. Sprinkle the crushed pistachios on top of the salad for added crunch. Serve immediately and enjoy your delicious salad.
