Ingredients

  • Mini peppers
  • 165g cream cheese
  • 100g Jerk Spice Cheddar (grated)
  • 2–3 chopped spring onions
  • Fresh jalapeño slices
  • Salt and black pepper (to taste)

Method

  1. Slice your mini peppers in half and scoop out the seeds.
  2. In a bowl, combine cream cheese, grated jerk spice cheddar, chopped spring onions, and season with salt and pepper.
  3. Spoon the cheesy mixture into each pepper half. Sprinkle with extra grated cheddar on top.
  4. Place the stuffed peppers on a baking tray and bake for 10 minutes, until the cheese is melted and golden brown.
  5. Remove from the oven and finish with fresh spring onions and sliced jalapeños for extra heat.
