  • 300g sausage meat (or skinned sausages)
  • ½ onion, finely chopped

  • 100g cranberry sauce
  • 320g puff pastry
  • 1 egg, beaten
  • Dried rosemary

Method

  1. Prepare the filling:
     In a mixing bowl, combine the sausage meat, chopped onion, Cranberry Cheshire, and a drizzle of honey. Mix until all ingredients are evenly combined.
  2. Roll the pastry:
     Roll out the puff pastry and lightly roll it over with a rolling pin to create a smooth, even surface.
  3. Add the filling:
     Place the sausage mixture in a long line, approximately one-quarter of the way into the pastry sheet.
  4. Add the cranberry layer:
     Spread the cranberry sauce along the top of the sausage mixture.
  5. Seal the pastry:
     Brush the edge of the pastry with beaten egg, then fold the long side over the filling. Press the edges down with a fork to seal.
  6. Slice and finish:
     Cut into equal-sized sausage rolls, brush with more egg wash, and sprinkle dried rosemary on top for enhanced flavour and aroma.
  7. Bake:
     Transfer to a baking tray and bake for 20–25 minutes, or until the pastry is puffed and golden brown.
