Ingredients

  • 150g large poppadoms
  • 180g cooked tandoori chicken, chopped
  • 100g Masala Red Leicester cheese, grated
  • 20g diced cucumber
  • A few dollops of premium mango chutney
  • Drizzle of mint yoghurt

Method

  1. Break the poppadoms in half and arrange them in overlapping layers in an ovenproof dish.
  2. Sprinkle over half of the grated Masala Red Leicester, then add the remaining poppadoms.
  3. Top with the tandoori chicken, followed by the rest of the grated cheese.
  4. Bake in a preheated oven at 180°C (160°C fan) for around 10 minutes, or until the cheese is golden, bubbling, and irresistibly aromatic.
  5. Remove from the oven and finish with diced cucumber, mango chutney, and a drizzle of mint yoghurt. Serve warm and enjoy a truly indulgent cheese experience.
