This easy to make Cheshire cheese frittata is ideal for a quick mid-week meal or even a luxurious brunch! It can be made with any cheese from our waxed cheese truckle range.
Preheat your oven to 180°C (350°F).
Thinly slice the new potatoes and cook though in a pan of boiling water. Chop the blanched broccoli and spinach, and grate the Cheshire cheese.
In an oven-safe skillet pan, heat some olive oil over a medium heat. Add the sliced new potatoes and cook until they are tender and lightly browned, about 5-7 minutes. Add the chopped broccoli and spinach, and cook for another 2-3 minutes until the vegetables are tender. Season with salt and pepper to taste.
Pour the whisked eggs evenly over the vegetables. Allow the eggs to set slightly around the edges.
Sprinkle the grated Cheshire cheese evenly over the top of the frittata.
Transfer the pan to the preheated oven and bake for about 15-20 minutes, or until the eggs are fully set and the cheese is melted and bubbly.
Once cooked, remove the frittata from the oven and let it cool for a few minutes. Sprinkle with thinly sliced chives for garnish.
Slice the frittata into wedges and serve hot or at room temperature. Enjoy your delicious New Potato and Cheshire Cheese Frittata!
