Smokey Corn Ribs with Smoked Red Leicester Cheese

If you’re looking for a fun and flavour-packed BBQ side, these smokey corn ribs are a must-try. Juicy corn on the cob is sliced into “ribs,” brushed with paprika-infused oil, grilled to perfection, and topped with melted Smokewood Red Leicester cheese. Finished with fresh parsley and fiery red chillies, this dish is smoky, cheesy, and a little bit spicy — the ultimate summer snack or BBQ crowd-pleaser.

Ingredients

  • 2 large or 4 small corn on the cobs
  • Olive oil
  • 1 tsp smoked paprika
  • 100g Grated Smokewood Red Leicester
  • Fresh parsley (chopped)
  • 1–2 red chillies (sliced)

Method

  1. Carefully slice the corn lengthways into rib-style pieces.
  2. Brush the corn ribs with olive oil and smoked paprika, then grill for around 10 minutes, turning occasionally until charred and tender.
  3. Sprinkle with grated Smokewood Red Leicester and place back under the grill for 1–2 minutes until the cheese has melted.
  4. Remove from the grill, top with fresh parsley and red chillies, and serve with a smoky BBQ sauce for dipping.
