The history of Stilton can be traced back to the early 18th century and although it is clear that the recipe used has changed quite dramatically over the years it remains one of the world's best known and much-loved cheeses. Quintessentially English, Stilton has its own Certification Trade Mark and is UK Protected Food Name.

Made in small batches in the historic village of Hartington, Derbyshire. An intense extra creamy cheese and with a Gold Award one of the best in the world too! Stilton.
The Hartington Creamery makes its award-winning Stilton in the Parish of Hartington in barns that have been converted to a small scale cheese factory on the historic Pikehall Farm. Although Stilton had been made in the village since the 1870s No Stilton had been made since 2009 until a small team of artisan producers started the creamery and gained their PDO and the right to call their cheese Stilton in 2012.

Blue Stilton's distinctive blue veins are created by piercing the crust of the cheese with stainless steel needles, allowing air into the core. The manufacturing and ripening process takes approximately nine to twelve weeks.
For a cheese to use the name "Stilton", it must be made in one of the three counties of Derbyshire, Leicestershire and Nottinghamshire, and must use pasteurised local milk. The manufacturers of Stilton cheese in these counties applied for and received Protected Geographical Status (PDO) in 1996.
