Crispy, golden and packed with flavour, these smashed potatoes are the perfect indulgent side dish for a hearty winter meal. Made luxurious with our naturally smoked Smokewood Red Leicester, each bite delivers a rich, tangy depth balanced by a gentle smokiness that elevates even the simplest supper. Whether served alongside a roast or as a standout sharing dish, this recipe brings premium cheese craftsmanship to the table.
Bring a pan of salted water to the boil and add the potatoes. Cook until tender when pierced with a knife, then drain and leave to cool for 5 to 10 minutes.
Spread the potatoes on a lined baking tray, leaving around 5cm between each. Using a potato masher or the base of a glass, gently smash each potato until about 1cm thick.
In a small pan, melt the butter and add the crushed garlic and parsley, cooking briefly until fragrant and softened.
Brush the smashed potatoes with the garlic butter, then top with a generous sprinkle of grated Smokewood Red Leicester.
Bake in the oven for approximately 30 minutes, until golden, crisp and bubbling. Serve alongside your favourite roast meat or winter warming dish.
