Black & Blue UFO Burgers

Blue and Bob Cheese Burgers

Black Bob and Hartington Stilton are the inspiration for these summertime burgers recipes. The UFO's are made using two home made patties which have the cheese placed in the middle of one and then sealed with the other to make a flying saucer shape. Bite into the succulent beef burger with cheese oozing from the middle. Quick to make and cook topped with sauteed onions for a true gourmet delight.

Ingredients:
500g lean minced Beef
Half onion finely chopped
2 tsp Oregano
1 tsp Paprika
1 tbsp Olive Oil
1 tsp Salt and grind of Pepper
Hartington Stilton 
Black Bob Extra Mature 
4 x Bread buns

Method

1. Finely chop half the onion and slice the other half for sauteing for the topping. Put all the ingredients into a mixing bowl and mix thoroughly by hand for a few minutes to make sure everything is blended.

2. Weigh out 80g each of the meat mixture so you have eight portions and roll into balls. Flatten the balls and shape into patties about 1cm thick. In the centre of four of the patties place either a Black Bob or Hartington Blue Stilton or even both as a filling leaving room around the edge for sealing. Place another pattie on top then carefully work around the edges sealing the cheese inside. At this point it is a good idea to cover them with clingfilm and chill them in the fridge for half an hour. Make sure the seal around the flying saucer shape is tight as possible.

2. Heat up your griddle or BBQ and add the sliced onions to a pan and cover with a small amount of water, just enough to cover the onions and add a knob of butter and simmer on a low heat making sure the pan does not dry out. If it does reduce the heat and add a little more water. The onions will take 10 minutes which is about the time it will take to chargrill or barbeque your UFO Burgers. Toast the bread buns for 1 minute and add the UFO Burger and top with the soft buttery onions. Eat and enjoy the meltingly tasty cheese oozing with each bite.
