Wash and scrub the potatoes thoroughly. Pat them dry with a paper towel.
Cut slits into each potato, making sure not to cut all the way through. The cuts should be about 1/8 inch apart.
Drizzle the olive oil over the potatoes, making sure to coat them evenly.
Season the potatoes with salt and pepper to taste.
Place the potatoes in the air fryer basket and cook for about 25-30 minutes, or until they are crispy on the outside and tender on the inside. Be sure to flip them halfway through for even cooking.
