Perfect bite-size quiches that are tasty and just great for National Afternoon Tea Week. Add ham or crispy bacon for an extra tasty bite.
Flour the surface and thinly roll out the pastry. Cut into small circles using a pastry cutter that is 1cm larger than the tart tin. Line your tin with the pastry circles, pressing into the edges and sides.
Heat your oven to 200 C / Gas 6. Whisk the egg and grate the cheese.
Season to taste.
Add the eggs to the pastry and fill until almost full. Top with cheese and slices of spring onion.
Bake for 25 minutes or until golden brown and the egg puffs up.
Leave to cool and then chill before serving.
You can add an extra level of flavour to this recipe by choosing one of our flavoured cheeses. El Gringo would work well here.
