This sweet, tasty salad is perfect to make ahead for a special lunch. Add some soft pitta or crusty bread and mop up all tasty the juices from this tasty dish.
Serves 2-4
Preheat the oven to 180 degrees C / 350 F
Slice the tomatoes in half and add to the baking sheet add the asparagus.
Drizzle the asparagus and tomatoes with olive oil and add a pinch of salt and pepper.
Cook in the oven for around 15-20 minutes until tender and charred.
Remove from the oven and allow to cool slightly.
Add the washed spinach to a bowl and add the cheese by cutting it into roughly crumbly chunks.
Add the asparagus and tomatoes and drizzle with balsamic glaze. Enjoy!
