Black Bob Creamy Cauliflower & Broccoli Soup

This hearty winter warming soup is the perfect winter pick me up. Dip with chunky white bread and lashings of Cheshire butter.

Serves 6

Ingredients

  • 200g truckle of Black Bob Mature Cheddar Cheese
  • 2 tablespoons of butter
  • 2 tablespoons of olive oil
  • 2 carrots, peeled and chopped
  • 1 onion, sliced
  • 1 cauliflower
  • 1 broccoli, cut into florets
  • 3 tablespoons of plain flour
  • 100g double cream
  • 1 ½ litres of chicken or vegetable stock
  • 2 tablespoons of fresh thyme
  • ½ teaspoon of cayenne pepper
  • Salt and pepper to taste

Method

In a large pan, melt together the olive oil and butter.

Add the onion, carrots and thyme and cook until soft and fragrant.

Stir in the flour and cook for around 2 minutes. Gradually add the vegetable or chicken stock.

Add the cauliflower and bring to the boil, cover and then reduce the heat and cook for a further ten minutes until soft and tender.

Puree the soup with a hand blender and add more stock if the consistency is too thick. Add the broccoli florets, salt and pepper and cayenne and cook for a further 10 minutes.

Blend further until small chunks of broccoli remain and return to the heat. Stir in cream and grate the BLACK BOB Mature Cheddar and add to the soup and stir until melted. Garnish with cream and fresh thyme.
