Black Bob Mature Cheddar Cheese Scrambled Egg

Breakfast grilled Black Bob Mature Cheddar Cheese with Sourdough Toast with soft scrambled egg and Pesto.

This Black Bob toasty is breakfast perfection, it’s so easy to make and the perfect winter pick me up both for weekends or weekdays. Add a drizzle of local honey for that perfect sweet and salty combination.

Serves 2

Ingredients

  • 4 large eggs
  • Pinch of sea salt
  • 4 tablespoons of Cheshire butter
  • Crushed red pepper flakes to test
  • 4 slices of sourdough bread
  • 200g truckle of Black Bob Mature Cheddar Cheese
  • 4 tablespoons of green pesto
  • 2 teaspoons of local honey for drizzling (optional)

Method

Whisk together the eggs and a pinch of salt in a medium bowl.

Melt the butter in a large frying pan over a medium heat. Add the eggs and cook through.

Remove from the pan and add chilli flakes.

Spread the Sourdough with butter on the inside of the bread and add the egg.

Grate the Black Bob Mature Cheddar Cheese truckle and add desired amount to the egg and bread.

Add pesto to the bread and then add the top slice of sourdough facing butter side up.

Place the sandwiches one at a time to the frying pan and cook until golden for around five minutes.

Serve with more chilli flakes or a drizzle of honey if so desired.
