Caramelised Onion & Rioja Cheddar Cheese Smashed Potatoes

Dare we say it, but if you have a little cheese and chutney left over then this is the perfect recipe to use up a few ingredients. Use as little or as much of the cheese and chutney to create this perfect side dish to any main. You could also serve them alone with some sour cream, just add some chives!

Serves 2-4

Ingredients

To serve:

  • 250g Sour Cream
  • A Handful of Chopped Chives.

Method

Preheat the oven to 180 degrees C / 350 F

Boil the potatoes in a saucepan for around 20 minutes until soft to the touch.

Remove from the pan and drain.

Add the potatoes to a lined baking sheet and crush each individual potato.

Grate the cheese finely and sprinkle over the potatoes.

Add spoonsful of the caramelised onion chutney to the tray.

Drizzle with a little olive oil.

Bake in the oven for 30 minutes or until the potatoes are crispy and all the cheese is melted.

Remove from the oven and allow to cool.

Transfer to a serving plate and add chopped chives.

Dip in sour cream with chopped chives for an extra treat.
