400g Soft cheese (cream cheese or any other soft cheese of your choice)
100g Dried cranberries
Additional dried cranberries for rolling
Optional: Pistachios, finely chopped
Method
Allow the soft cheese to come to room temperature for easier mixing.
Grate the Cranberry Cheshire Cheese
Finely chop the dried cranberries.
If using pistachios, finely chop them as well.
In a large mixing bowl, combine the soft cheese and grated Cranberry Cheshire Cheese. Mix well until the cheeses are evenly combined.
Fold the finely chopped dried cranberries into the cheese mixture. Ensure they are evenly distributed throughout the mixture.
Take a small portion of the cheese mixture and roll it between your palms to form a ball. Aim for bite-sized balls, but you can adjust the size based on your preference.
Roll in Cranberries (and Pistachios, if desired):
Roll each cheese ball in a plate of dried cranberries, ensuring the surface is coated evenly. Press the cranberries onto the balls to help them adhere.
Optionally, if you add pistachios, roll some or all of the cheese balls in the finely chopped pistachios.
