This tasty citrus salad is the perfect accompaniment to any main course or the perfect pick-me-up for early Spring lunches and dinners.
Serves 1
Start by cutting the carrots into batons and adding them to a baking tray.
Drain the chickpeas and rinse and add the same baking tray.
Cut the Beetroot into quarters and add the baking sheet.
Drizzle with Olive Oil and sprinkle with chilli powder or flakes.
Cook the quinoa for around 15 to 20 minutes and season with herbs or stock and allow to cool.
Add the Rocket to a large salad bowl and add the cooked vegetables and chick peas.
Add the Blueberries, pomegranate, cucumber and quinoa.
Mix the salad.
Peel the oranges and cut them into thin slices.
Add the orange to the salad and finish by adding our crumbly Traditional Cheshire.
