Method

  1. Preheat a non-stick frying pan over medium heat.
  2. Create a circle with the grated Cheshire cheese in the center of the pan.
  3. Crack the egg into the middle of the cheese circle.
  4. Spoon the pesto sauce over the egg and sprinkle a pinch of chilli flakes on top.
  5. Cook the egg with the cheese, pesto, and chilli flakes until the white is set and the cheese has melted, but the yolk is still runny. You can cover the pan with a lid for a few seconds to help the top of the egg cook faster.
  6. Season with salt and pepper to your liking.
  7. Place the toasted crumpet on a plate and gently transfer the cooked egg with the cheese, pesto, and chilli flakes onto the crumpet.
  8. Garnish with fresh basil leaves, if desired, before serving.
