El Gringo Cheddar Cheese and Prosciutto Ciabatta Melts

Indulge in the rich and satisfying flavours of The Cheshire Cheese Company's El Gringo Cheddar Cheese paired with crispy prosciutto and zesty rocket on toasted ciabatta. Drizzled with olive oil and lime juice, this delightful ciabatta melt is perfect for a quick and indulgent meal.

Makes 4 Toasted melts

Ingredients

  • 200g Cheshire Cheese Company El Gringo Cheddar Cheese (or similar)
  • One ciabatta loaf, sliced and toasted or four individual baguettes
  • Handful of rocket
  • Drizzle of Olive oil
  • Juice of 1 lime
  • 8 slices of prosciutto
  • Chilli butter (shop-bought or homemade)

Method

  1. Preheat your oven to 180°C (350°F).
  2. Begin by preparing the chilli butter. If you're making it from scratch, mix softened butter with finely chopped red chillies (adjust to your preferred level of spiciness). Set aside.
  3. Lay out the slices of prosciutto on a baking tray and bake in the preheated oven for about 5-7 minutes or until they become crispy. Keep an eye on them to prevent burning.
  4. While the prosciutto is baking, slice the Cheshire Cheese Company El Gringo Cheddar Cheese.
  5. Take the toasted ciabatta slices and spread a thin layer of the chilli butter on one side of each slice.
  6. Place the sliced Cheddar cheese on top of the chilli-buttered side of the ciabatta slices and bake in the oven for about 5-7 minutes or until the cheese is melted and gooey.
  7. Once the prosciutto is crispy, remove it from the oven and set it aside.
  8. Stack the slices of prosciutto on top of the Cheddar cheese on half of the ciabatta slices.
  9. In a bowl, mix the rocket with a drizzle of olive oil and the juice of 1 lime.
  10. Place the rocket mixture on top of the prosciutto slices.
  11. Close the sandwiches by placing the remaining ciabatta slices (with the cheese and prosciutto) on top of the rocket-covered slices.
  12. Place the assembled ciabatta melts back on the baking tray.
  13. Serve the ciabatta melts hot, with a side of extra rocket and a drizzle of olive oil if desired.
