Frosty Cranberries

This festive cranberry recipe is the perfect addition to any of our 12 cheeseboards of Christmas and the perfect pairing with our Cranberry Cheshire Cheese. Impress your guests with this sweet tart recipe.

Ingredients

  • 350g fresh or frozen cranberries
  • 1 litre water
  • 200g granulated sugar

Method

  1. Wash the cranberries thoroughly.
  2. Heat the water in a large saucepan, then add 100g sugar to the pan and allow it to dissolve.
  3. Gently stir the cranberries into the syrup, then simmer for about five minutes. Remove from the heat and leave the cranberries in the pan of syrup for a few hours.
  4. Remove the cranberries with a slotted spoon and place on a wire rack to dry. Dry until they are tacky to the touch.
  5. Test one of the cranberries by rolling the cranberries in the remaining 100g of granulated sugar. The sugar should stick to the cranberries effortlessly, but if it clumps, then they are too wet and need a little longer to dry. Take your time and roll the cranberries in the sugar in batches of two or three.
  6. To serve, place the frosted cranberries on your cheeseboard or in a festive glass bowl for your guests to enjoy with their festive cheese.
