So creamy and comforting, this easy quick dinner is perfect for lighter Spring evenings. Serve with your favourite white wine or Prosecco.
Heat the olive oil in a large pan on a medium heat and add the chopped shallots.
Sauté for one minute then add the garlic for a further 20 seconds. Add the vegetable stock and lemon juice and stir. Pour in the cream and bring to a simmer.
Add the gnocchi and season with salt and pepper. Cook on a medium heat for around 10 minutes until the gnocchi is soft and the sauce is thick and creamy.
Add the grated cheese and a sprinkle of fresh thyme. Allow the cheese to melt and remove from the heat.
