Gourmet Truffle Cheddar Cheese Risotto Verde

This Risotto Verde made with our truffle cheddar is the perfect easy mid-week dinner. Add grilled chicken or prawns for a more substantial meal.

Serves 2 – 4 people.

Ingredients

Method

In a large frying pan heat the olive oil and fry the onion and garlic until soft and golden.

Add the rice and turn up the heat, coat the rice in the olive oil.

When coated, add the vegetable stock one ladle at a time stirring continuously. Once absorbed, add more.

In a food processor, add the spinach and 2 tablespoons of stock. Whizz until pureed.

Once the rice is almost cooked, stir in the puree, peas and asparagus.

Cook for a few more minutes until the peas are cooked and add the grated cheese and lemon zest

Season to taste and add fresh peas shoots to garnish and taste.  Enjoy!
