Hunter Truffle Cheddar and Black Pepper Pappardelle

Savour the exquisite harmony or flavours with our luscious Hunter cheese, infused with delicious truffle and black Pepper, making this Pappardelle pasta a hearty dish, perfect with a glass of wine on the side.

Ingredients

  • 25ml extra virgin olive oil
  • 100g mushrooms, chopped.
  • 150g Pappardelle pasta
  • 1 garlic clove, chopped.
  • Tablespoon tomato puree
  • 150g Cheshire Cheese Company Hunter Cheese, grated.
  • 30g Butter
  • 100ml double cream
  • Pinch of salt
  • Black pepper to season
  • Thyme to garnish

Method

Melt the butter in a frying pan and add the mushrooms and garlic and cook over medium heat until golden. 

Add a pinch of salt, and meanwhile, bring a large pan of water to the boil and add a pinch of salt.  Cook the pasta until al dente. Drain the pasta and reserve.

Add the tomato puree to the frying pan and add the double cream. Stir and add the Hunter cheese and stir until completely melted.

Add the pasta to the sauce and gently coat with tongs.

Season further with black pepper and garnish with a sprig of thyme.

Add further grated Hunter cheese for an extra cheesy dish.
