This tasty fresh salad is perfect for summer evenings with fresh ingredients that make it simple, savoury, sweet, easy, healthy, and gluten-free.

Ingredients

200g Traditional Creamy Cheshire Cheese Waxed Truckle
400g Melon, any of your favourite variety
200g chopped cucumber
15 large mint leaves, shredded
Two tablespoons of Olive Oil
One lime, juice only
Salt and Pepper to taste

Method

Prepare all the ingredients into a large serving bowl and toss everything together well. Add seasoning as desired and serve immediately.
