Valentine's Date Night Black Truffle Gourmet Luxury Cheese & Prawn Linguine

Perfect for an indulgent romantic night in, this Black Truffle Gourmet Luxury Cheese and prawn linguine is sure to make the evening a hit.

Serves 2

Ingredients

  • 30g Black Truffle Gourmet Luxury Cheese, grated
  • 2 Tablespoons butter
  • 300g Linguine
  • 325g Prawns
  • 4 Garlic cloves
  • 100ml White wine
  • 100ml Cream
  • 175ml Vegetable stock
  • Chopped parsley to garnish
  • Salt & black pepper to taste
  • 1 Tablespoon lemon juice

Method

Start by adding the linguine to boiling water and cook for 10 minutes. When the pasta is cooked, drain and sieve. Keep to one side.

Reserve some of the cooking water in case you need to water down the sauce later.

Next, cover the prawns in lemon juice and fry them in the butter until cooked. 

Remove from the heat and add to a plate whilst cooking the sauce.

To make the sauce:

Add the butter to a frying pan and add the garlic and fry for a minute or two until melted.

Add the wine and simmer until reduced.

Next add the Black Truffle Gourmet Luxury Cheese, cream, and vegetable stock.  Keep stirring until all the cheese has melted. The sauce should start to thicken at this point.

Add the prawns and pasta back to the pan and any liquid from the prawns.

Stir thoroughly and add the salt and pepper.
